Parmesan Crusted Asparagus

Ingredients
- ¾ cup grated Parmesan cheese
- ¾ cup panko breadcrumbs
- 2 ea eggs, beaten with 1 tsp water
- 3 Tbsp all-purpose flour

1 Tbsp Shawarma Spice Blend

1 Tbsp Vik’s Garlic Fix! Spice Blend
- ½ tsp kosher salt
- 1 lb asparagus, trimmed (about 20 spears, thicker spears work best)
- special equipment: cooking spray
- 1 cup honey

¾ tsp Harissa Seasoning
- 1 Tbsp lemon juice
- ¾ cup plain Greek yogurt
- ¼ cup sour cream
- ¾ cup grated deseeded cucumber

1 Tbsp Tzatziki Seasoning

Directions
Parmesan Crusted Asparagus
- Generously coat air fryer basket with cooking spray; set aside. In a large, shallow dish combine cheese and breadcrumbs; set aside. In another large, shallow dish whisk together eggs, flour, spice blends, and salt.
Dip asparagus in the seasoned egg mixture to coat; lift with a fork or tongs to let excess egg drip off. Transfer to the breadcrumb-cheese mixture and coat thoroughly. Place breaded asparagus in the air fryer in a single layer; air-fry at 400ºF for 6 to 8 minutes, flipping halfway until golden. Work in batches if necessary. Serve with Harissa Hot Honey and/or Cool Tzatziki Dip.
Alternatively, oven-bake at 425ºF on a parchment-lined baking sheet for 11 to 13 minutes.
Harissa Hot Honey
Add ingredients to a small saucepan over medium heat. When mixture begins to gently bubble, reduce heat to low. Heat for one additional minute; transfer to a serving bowl.
Cool Tzatziki Dip
In a medium bowl, mix all ingredients to combine. Refrigerate for at least one hour before serving for flavors to meld.
