Warm German Potato Salad

The perfect side or potluck dish. With a tangy dressing made up of the Midwest BBQ flavors of Smokehouse Rub & the ballpark flavors of Tailgater's Spice Blend, one taste of this dish and you will never go back to ordinary potato salad!
Ingredients

1 Tbsp. Tailgater's Spice Blend

1 Tbsp. Smokehouse Rub
- 1 Tbsp. table salt
- 1 ½ lbs new potatoes, washed
- 5 bacon slices, thinly sliced crosswise
- 1 red onion, halved and thinly sliced
- 2 Tbsp. white vinegar
- 2 Tbsp. apple cider vinegar
Directions
- BOIL a large pot of water. Add table salt and potatoes. Lower heat to medium, and simmer 20-30 mins. until tender. Drain. Allow to cool 10 mins., then cut in half. Place in a large bowl. Set aside.
- HEAT a medium skillet over medium heat. Add bacon and cook until crisp, 5-8 mins. Drain excess fat.
- ADD onion, Tailgater's Spice Blend, and Smokehouse Rub. Cook, stirring often, until tender, 3-5 mins.
- REMOVE from heat and stir in both vinegars and mustard until fully combined.
- TOSS with potatoes and parsley. Serve.
