Cheesy Truffle Cauliflower Mash

With luxurious flavors of Parmesan, black garlic, and black truffle, this cauliflower mash is a creamy, low-carb alternative to mashed potatoes – or simply an equally satisfying companion. The key to creating amazing flavor is in the roasting. The caramelized, golden-brown edges on the cauliflower give this decadent side dish a depth of flavor steaming or boiling just cannot match.

Ingredients
- ¼ cup olive oil

Obsession Spice Blend
- 2 lbs cauliflower florets
- 1 ea small yellow onion, quartered
- ½ cup sour cream
- 4 Tbsp olive oil (or softened unsalted butter)

- 3 Tbsp unsalted butter, melted

- special equipment: rimmed baking sheet, parchment paper, food processor or blender
- (immersion or standard)
Directions
- Preheat oven to 425°F. Line a baking sheet with parchment paper. Mix ¼ cup olive oil and Onion Obsession Spice Blend in a small dish. Arrange cauliflower florets and onion pieces on the baking sheet; brush with olive oil mixture to coat. Roast for 30 to 45 minutes, or until knife-tender, turning halfway through.
- Transfer half the roasted vegetables to a food processor or blender; blend thoroughly. Add sour cream, olive oil (or butter), Truffle Parm Garlic Bomb Seasoning, Romano Cheese Powder, and remaining vegetables; pulse to achieve a mashed potato consistency. Transfer to a serving bowl; keep warm. Stir together topping ingredients.
- To serve, spoon warm melted butter topping mixture over cauliflower mash.
