Vegetable Curry

Traditional Indian curry is created with an assortment of individual spices, whole or ground, to bring the dish to life! Made in a variety of ways, authentic recipes often vary from family to family as spices are chosen carefully to enhance the flavor of each element within the dish.
Ingredients
- 2 potatoes
- ½ head of cauliflower
- ½ red bell pepper
- ½ green bell pepper
- 1 cup peas
- 6 green beans
- ½ cup broccoli
- 7 pieces Paneer (or sub Indian Tofu)
- 5 Tbsp. vegetable oil, divided

2 Bay Leaves

1 Cinnamon Stick – Korintje
- 2 green chiles, split in half
- 1 Tbsp. ginger garlic paste
- ½ cup plain yogurt

2 ½ Tbsp. Garam Masala Spice Blend

½ Tbsp. Turmeric

½ Tbsp. Light Chili Powder
Directions
- CHOP all vegetables and paneer into fine pieces.
- IN a medium saucepan, heat 2 Tbsp. vegetable oil, then add vegetables and paneer to saucepan and stir fry until done. Set aside in a bowl.
- IN the same saucepan, heat 3 Tbsp. vegetable oil. Add Bay Leaves, Cinnamon Stick - Korintje, green chiles, and ginger garlic paste. Stir fry until brown.
- ADD yogurt and fried vegetables. Stir and cook for 2 mins.
- ADD Garam Masala Spice Blend, Turmeric and Light Chili Powder. Cook for 7 additional mins. to allow flavors to combine.
- SERVE over rice with a warm side of naan.
- Many traditional curries are made without exact measurements. Our measurements are a start. Add seasonings, taste, and incorporate more as desired.
