Butternut Squash & Caramelized Onion Flatbread

A crispy flatbread topped with roasted butternut squash, caramelized onions, melted cheeses, fresh herbs, and balsamic glaze. Ingredients
- 3 Tbsp olive oil, divided
- 1 medium yellow onion, sliced

½ tsp Onion Obsession Spice Blend
- 2 cups butternut squash, small cubes

2 tsp Autumn Harvest Spice Blend
- 1 ea artisan flatbread

1½ tsp Garlic ‘n Herb Seasoning
- 1 cup shredded fontina cheese
- ½ cup baby arugula
- garnish balsamic glaze
- ¼ cup glazed pecans or walnuts, chopped, optional
Directions
- Prepare Caramelized Onions. Heat a large skillet over medium heat with 1 Tablespoon olive oil. Add onions and Onion Obsession Spice Blend and stir to combine. Cook onions slowly, while stirring often, to gradually brown from blonde to dark golden. Remove from heat; set aside to cool.
- Roast Butternut Squash. Preheat the oven to 425ºF. Line a baking sheet with parchment paper. Place cubed butternut squash on baking sheet. Add 1 Tablespoon of olive oil and Autumn Harvest Spice Blend; toss to coat evenly. Roast for 25 to 30 minutes, tossing them halfway through cooking until golden and tender.
- Assemble the Flatbread. Brush the flatbread with the remaining Tablespoon of olive oil and sprinkle 1 teaspoon of Garlic ‘n Herb Seasoning on top. Top evenly with shredded cheese and caramelized onions. Arrange the butternut squash on the flatbread and sprinkle remaining Garlic ‘n Herb Seasoning on top. Bake according to flatbread package instructions. Remove from oven and allow to cool for 5 minutes. Top with arugula, balsamic glaze, and nuts, if using.
