Affectionately nicknamed “the caviar of the South”, pimento cheese is a staple in Southern states, though it enjoys a passionate following in other regions. Made with just five ingredients and ready in ten minutes – everything from crackers and crudité to sandwiches and burgers will love its tangy, cheesy flavor.
Ingredients
- 8 oz cheddar cheese, shredded (sharp or extra sharp)
- 8 oz cream cheese, room temperature
- ½ cup mayonnaise

Tbsp Tailgater’s Spice Blend
- 4 oz pimentos, drained
Directions
- Add shredded cheese, cream cheese, mayonnaise, and spice blend to a large mixing bowl (or stand mixer bowl). Using a hand mixer (or stand mixer fitted with a paddle attachment), beat until creamy and fully combined. Fold in the drained pimentos. Serve immediately or cover and refrigerate for up to one week.
Recipe Note
Tips for Best Results
• Purchase cheddar cheese in block form and freshly grate. Eight ounces of block cheese will yield approximately 2 cups when grated. (Pre-shredded cheese is coated in a starchy powder that mutes the flavor and interferes with its creamy texture.)
• Flavors will improve as the mixture sits; feel free to prepare 1 to 2 days before serving.
Delicious Variations
• For a spicier pimento cheese, mix in ½ teaspoon Aleppo Pepper.
• For an equally tasty change of pace, try a version replacing the same amount of Tailgater’s with Signature Spice Blend.
