Ingredients
- 8 oz cream cheese, room temperature
- 1 cup sour cream
- 1/2 cup buffalo sauce
-
1 Tbsp Classic Ranch Spice Blend
-
1 Tbsp Buffalo Bleu Dip Spice Blend
- 2 cups shredded cooked chicken
- 4 oz sharp cheddar cheese, shredded, divided
- 4 oz Monterey Jack cheese, shredded, divided
- 2 to 3 ea green onions, chopped
- garnish blue cheese crumbles, optional
Directions
- Preheat the oven to 350ºF.
- Add cream cheese and sour cream to a bowl and mix until smooth and creamy. Add buffalo sauce and spice blends; mix to combine.
- Next add the chicken, half of the cheddar, half of the Monterey Jack; fold until combined.
- Spread the buffalo chicken dip mixture into a 9-inch cast iron skillet, 9x9- inch baking dish, or pie pan. Sprinkle remaining cheese over the top. Place the skillet in the middle rack of the oven and bake for 20 minutes or until bubbly and the top is golden.
- Garnish with green onions and blue cheese crumbles, if using.
Recipe Note
If cooking chicken raw, for additional flavor, brush two boneless, skinless chicken breasts with mayonnaise and season evenly with Classic Ranch Spice Blend. Bake at 375ºF until the internal temperature reaches 160ºF in the thickest part of the chicken, about 20 minutes. Let cool completely and then shred. Grilled, smoked, or rotisserie chicken can be used for this recipe.
