Praline Bacon

Sweet. Savory. Spicy. Smokey. Salty. Chewy. Crispy. Candy-y. aaaand Bacon-y. Breakfasts and brunches will never be the same. Neither will BLTs, ice cream, or likely any other eating occasion. Store any leftover praline mix in the freezer for next time.
Ingredients
- 1 pound thick-cut bacon

4 tsp Maple Bourbon Jalapeño Seasoning
- 2 Tbsp light brown sugar
- 1/2 cup pecan halves
Praline Mix
Directions
- Heat oven to 375ºF.
- Line a rimmed baking sheet with aluminum foil. Arrange the bacon slices in a single layer on a wire rack and set it in the prepared sheet pan. Bake until the bacon begins to brown, 30 to 35 minutes, rotating the pan halfway through baking.
- Meanwhile, combine the seasoning, brown sugar, and pecans in a food processor (or zip-top bag). Pulse (or pound) until the pecans are finely chopped, about 15 pulses - aim for a consistency similar to coarse sand with some small chunks.
- Remove the par-cooked bacon from the oven, sprinkle each slice evenly with the praline mix. Roughly ½ teaspoon per slice is a good starting point; add more, if desired. Return to the oven and bake until desired crispness, about 10 additional minutes.
- Allow to cool on rack for 5 minutes before serving.
