These cranberry orange muffins are bright, zesty, and perfect any time of day.
Ingredients
- ½ cup orange juice
- 2 Tbsp melted coconut oil
- 2 large eggs

2 Tbsp Cranberry Orange Sugar

2 Tbsp Florida Sunshine Sugar
- 1 cup almond flour
- 1 tsp baking powder

1 tsp Chai Baking Spice Blend
- ½ cup dried cranberries
- 1 large orange, zested
Directions
- Preheat oven to 350ºF.
- To a large bowl add orange juice, oil, eggs, and sugars; mix with an electric mixer. Add almond flour, baking powder, and spice blend; mix until just combined. Fold in dried cranberries & orange zest.
- Transfer batter to a lined muffin tray; bake for 25 to 30 minutes.
