Coconut Turmeric Chia Parfait

Creamy, satisfying, and packed with nutrients, chia pudding is the perfect healthy breakfast, snack, or dessert. While this pretty parfait may look fancy, it's a cinch to make. Simply shake ingredients in a mason jar and keep in the fridge for an anytime treat loaded with protein, fiber, and omega-3s.
Ingredients
- ½ cup chia seeds
- 2 cups coconut milk

1 Tbsp Golden Monk Fruit Sweetener

½ tsp Pure Vanilla Extract
- 2 Tbsp chia seeds

1 tsp Golden Monk Fruit Sweetener
- ½ cup pineapple juice

½ tsp Good As Gold Spice Blend
- ¾ cup finely chopped banana, mango, pineapple, or combo
- garnish fresh mint, coconut chips and/or fruit, optional

- Prepare Coconut Chia. Combine ingredients in a 16-ounce jar; seal and shake vigorously to combine. Refrigerate for 4 hours to overnight for chia seeds to bloom; shake periodically to ensure chia seeds do not clump.
- Prepare Turmeric Chia. Combine ingredients in a 12-ounce jar; seal and shake vigorously to combine. Refrigerate for 4 hours to overnight for chia seeds to bloom; shake periodically to ensure chia seeds do not clump.
- Remove chia mixtures from refrigerator; stir well. If too thick, thin as needed with additional coconut milk or pineapple juice for a consistency similar to tapioca pudding. To the turmeric chia mixture, stir in chopped fruit.
- Assemble. To a 6- or 8-ounce serving glass, add 3 spoonfuls of coconut chia. Layer 2 spoonfuls of turmeric chia, followed by 3 more spoonfuls of coconut chia. Glasses can be assembled and refrigerated up to one day in advance. To serve. top with choice of garnishes.
