Indulge in a sparkling delight with this champagne cocktail that marries the spiced warmth of cinnamon plum tea with zesty fruit notes and herbaceous aromatics. A garnish of fresh pomegranate adds an exciting burst of flavor and texture. Perfect for festive occasions or a cozy gathering! For a nonalcoholic version swap the Champagne with seltzer.

1 Tbsp Cinnamon Plum Herbal Tea

1 tsp Pink Pepperberry
- 4 oz water at 200ºF
- ½ cup sugar
- 1 oz spiced syrup
- 1 dash orange bitters
- 1 small fresh rosemary sprig, rinsed
- 2 tsp fresh pomegranate arils
- 5 oz Champagne, Prosecco or Cava

Directions
- Prepare Spiced Syrup. Combine herbal tea, pink pepperberry, and water in a small saucepan over medium heat. When water just begins to simmer, turn off heat and cover; steep for 5 minutes. Stir in sugar until fully dissolved. Strain fully; discard tea. Allow to cool before cocktail assembly. Store leftover syrup in the refrigerator for up to one week. Yields approximately 6 ounces.
- Assemble Cocktail. Add spiced syrup, orange bitters, rosemary sprig, and pomegranate arils to a champagne flute or coupe glass. Top with Champagne, Prosecco, or Cava, approximately 5 ounces.
