This elegant and refreshing cocktail combines the botanical notes of gin with the tartness of pomegranate and the floral essence of hibiscus, topped with a bubbly finish. Perfect for any special occasion or a relaxing evening at home.
Ingredients

1 Tbsp Pomegranate Green Tea

1 tsp Hibiscus Flower – Cut & Sifted
- 9 oz water at 185ºF
- 2 oz water
- ¼ cup granulated sugar

½ tsp Hibiscus Flower – Cut & Sifted
- 1 oz gin
- 2 oz chilled pomegranate-hibiscus tea
- ½ oz hibiscus syrup
- 3 oz Champagne

garnish Rose Petals or Juniper Berries, optional

Directions
- Prepare Tea. Combine Pomegranate Green Tea, Hibiscus Flower, and hot water; steep for 3 minutes. Strain fully and transfer to refrigerator until chilled; discard tea leaves. Yields approximately 8 ounces.
- Prepare Syrup. Add syrup ingredients to a small saucepan. Heat over medium-low until sugar fully dissolves. Turn off heat and cover; steep for 5 minutes. Strain fully and transfer to refrigerator until chilled; discard flowers. Yields approximately 3 ounces.
- Assemble. To a Champagne flute add gin, chilled pomegranate-hibiscus tea, and hibiscus syrup. Top with Champagne. Garnish with rose petals or juniper berries, if desired.
