Ingredients
Tea-Infused Gin
Honey Syrup
- 3 oz water at 200°F

3 oz Honey – Granulated
Drink Assembly
- 1 oz tea-infused gin
- ½ oz honey syrup
- ½ oz fresh lemon juice
- 3 oz Champagne or Prosecco
- garnish lemon twist, optional
Directions
Infuse Gin. Combine tea and gin; cover and steep at room temperature for 1 to 2 hours. Strain and discard tea solids; refrigerate until ready to use. Yields approximately 6 ounces.
Prepare Syrup. Combine hot water and honey granules; stir until honey has fully dissolved. Yields approximately 5 ounces.
- Assemble Cocktail. In a cocktail shaker with ice add infused gin, honey syrup, and lemon juice. Secure lid and shake vigorously until chilled. Strain into a Champagne flute or coupe glass. Top with Champagne.
