The name of this refreshing cocktail was inspired by the rich rooibos base in our popular Bourbon Chestnut Herbal Tea (as well as an appreciation for Simon & Garfunkel!) This soft and satiny blend is complemented by sweet vanilla, lemon, and pomegranate, while a bit of hazelnut liqueur adds depth and warmth, all while keeping the ABV (alcohol by volume) low.

Ingredients
Herbal Tea Concentrate

5 Tbsp Bourbon Chestnut
Herbal Tea
- 22 oz water at 200ºF
Vanilla-Lemon Simple Syrup

1½ oz Vanilla Turbinado
Sugar

1½ oz Lemon Sugar
- 3 oz water at 200°F
Cocktail Assembly
- 5 oz bourbon chestnut concentrate
- ½ oz pomegranate juice (such as POM POM brand)
- ½ oz vanilla-lemon syrup
- ½ to 1 oz Frangelico hazelnut liqueur, optional
- 1 ea fresh rosemary sprig, divided
Directions
- Prepare Concentrate. Infuse herbal tea in hot water for 30 minutes. Strain fully; discard tea solids. Allow to cool before drink assembly. Yields approximately 20 to 21 ounces.
- Prepare Simple Syrup. Combine ingredients in a heat-safe vessel. Stir until fully dissolved. Allow to cool before drink assembly. Yields approximately 4 ounces.
- Assemble Cocktail. Add concentrate, pomegranate juice, syrup, and liqueur (if using) to a cocktail shaker. Pull leaves from bottom half of rosemary sprig and add to shaker (reserve remaining half for garnish). Add ice and shake to chill. Strain into a Collins glass filled with fresh ice; garnish with reserved rosemary sprig. Yields 1 serving.

Concentrate and simple syrup prep yields enough for 4 servings.
