Ingredients
- 1 (14oz) pkg cocktail sausages
- 1 sheet frozen puff pastry
- 1 large egg
- 1 Tbsp water

1 Tbsp Everything Bagel Spice Blend
- special equipment: rolling pin, pastry brush
- Tailgater’s Aioli
- ½ cup mayonnaise

2 tsp Tailgater’s Spice Blend
- ½ tsp lemon juice
- ½ cup ketchup

1 tsp Bloody Mary Spice Blend
- ½ tsp Worcestershire sauce
- 2 dashes hot sauce, to taste
- ¼ cup Dijon mustard

¼ cup Bourbon Honey
- 1 Tbsp mayonnaise

1 tsp Maple Bourbon Jalapeño Seasoning

Directions
Puff Pastry Pigs in a Blanket
- Prep Pastry. Defrost the puff pastry according to package directions. Line a baking sheet with parchment paper. Thoroughly pat the cocktail sausages to remove any liquid and set aside.
- Place the puff pastry on a lightly floured work surface and gently roll it out to even out any bumps. Cut the puff pastry into 6 long strips, about 1-inch across. Cut each strip into 5 rectangles, roughly 1-inch x 1½-inch each.
- Assemble. Place a sausage at one end of the rectangle and roll it up tightly. Place on the prepared baking sheet, seam side down. Repeat with the remaining sausages. Freeze the prepped sausage rolls in the for 10 to 15 minutes, to allow the puff pastry to firm up.
- Preheat the oven to 400ºF. Whisk together egg and water. Brush egg wash over the top of each sausage roll. Sprinkle with Everything Bagel Spice over the top of each roll. Bake sausage rolls for 18 to 20 minutes, or until golden brown and puffed. Serve with dipping sauces and enjoy!
Dipping Sauces
For each variety, combine all ingredients. Refrigerate, uncovered, for at least 30 minutes for flavors to meld and thicken slightly. Each variety yields roughly 4 ounces.
