Homemade Mini Pizzas

The school bell has rung and you are back at home, but you are starving! What's the solution? Pizza biscuits of course! It's no surprise that the average American consumes 6,000 slices of pizza deliciousness in a lifetime. Bake your own cheesy pizza bites in mins.!

Ingredients

1 tsp. Italian Herb Spice Blend

4 ½ tsp. Vik's Garlic Fix!

1 tsp. Onion Powder
-
1 tsp. Basil
-
1 tsp. Thyme
- 3 Tbsp. unsalted butter, melted
- 1-1.5 lb pre-rolled buttermilk biscuit dough
- 28 oz. tomato puree
- 2 cups shredded mozzarella cheese
- Fresh basil (optional)
- Pepperoni (optional)
- Sliced cherry tomatoes (optional)
Directions
- PLACE the biscuits about 2 inches apart from each other of a large sheet tray.
- STIR in the Italian Herb Spice Blend into the melted butter and brush a small spoonful over each biscuit, about ½ a tsp. Save the remaining butter mixture for the sauce. Allow the butter to sit on top of the biscuits for about 7-10 mins.
- BAKE the biscuits as directed.
- ADD in the tomato puree, Vik's Garlic Fix!, Onion Powder, Basil, and Thyme into a large nonstick skillet while the biscuits are baking.
- COOK the sauce on medium high heat for 5 mins. or just until the sauce is warmed through and starts to bubble. Take the sauce off the heat and stir in 2 tsp. of the remaining butter mixture.
- COOL the sauce until it has stopped steaming, about 5-10 mins. The biscuits should be done cooking by now. Make sure to take them out of the oven and let them cool for 10 mins.
- ONCE the biscuits are done cooling, slice through the middle vertically.
- PLACE the biscuits back onto the sheet tray with the fluffy insides facing up.
- TOP each biscuit with 1 Tbsp. of tomato sauce. Spread the sauce around the middle of each biscuit making sure not to get sauce on the edges of the biscuits.
- SPRINKLE each pizza with a small hand full of cheese. The cheese should cover most of the sauce. After the cheese has been placed on the biscuits, add on extra toppings like fresh basil, chopped cherry tomatoes, and pepperoni, if desired.
- BAKE the pizza biscuits at 400°F for an additional 5 mins. or until the cheese has melted.
Recipe Note
Tip: Use a serrated knife when slicing the biscuits, it will make slicing easier!
