Broccoli Cheddar Soup Hand Pies

Ingredients
- 2 Tbsp olive oil
- 1 medium white onion, minced
- 2 ea garlic cloves, minced
- 2 cups broccoli florets, chopped
- 1 tsp fresh thyme
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 (8 oz) pkg cream cheese, softened
- 1¾ cup shredded cheddar cheese, divided
- ½ cup shredded provolone cheese

1 Tbsp Cheddar Cheese Powder

1 Tbsp Garlic ‘n Herb Seasoning
- 2 ea frozen puff pastry sheets, thawed
- 2 Tbsp flour
- 1 ea egg, beaten
- 1 tsp water

1 Tbsp Everything Bagel Spice Blend

1 Tbsp Cyprus White Sea Salt

Directions
- Preheat oven to 400°F. Line two baking sheets with parchment paper; set aside.
- In a large pan, sauté onion in olive oil over medium heat until translucent (approximately 5 minutes). Add garlic, broccoli, thyme, salt, and pepper, and cook until broccoli is tender.
- In a large mixing bowl, add cream cheese, 1½ cups cheddar, provolone, Garlic ‘n Herb Seasoning, and Cheddar Cheese Powder. Beat with a hand mixer until well combined. Fold in broccoli mixture.
- Lay out puff pastry on a floured surface and cut into quarters with a sharp knife. Whisk egg with water; set aside. Place 3 to 4 tablespoons of the broccoli-cheese mixture in middle of each square. Brush the border of each pastry with egg wash and fold 2 opposite corners over the center of the filling. Brush with remaining egg and sprinkle with remaining ¼ cup cheddar and Everything Bagel Spice Blend. Transfer pastries to baking sheets and bake for 18 to 22 minutes, rotating pan halfway through cooking. Top with Cyprus White Sea Salt and serve warm.
